Socca, a legume-based cake, made of chickpea flour, a little olive oil, salt and pepper ! It is a gluten-free and vegan cake ! But what to eat with socca?

- The first way is to accompany it with a green salad ! Composed with rocket, mozzarella, cherry tomatoes, parmesan shavings and red cabbage. You can add a few radishes and an egg to this.
- The second way is to accompany it with courgette pie. You will need ricotta cheese with a little lemon juice that you will spread once the socca is cooked in the oven. Add a green and a yellow courgette. Cut them into strips and add a little more lemon juice, salt and pepper. Sprinkle with slivered almonds that you have toasted beforehand and add a dash of olive oil.

Half flour, half chickpea flour, a little milk, a little olive oil, grated cheese, eggs and salt, not forgetting baking powder. Bake in an oiled cake tin.
A Socca with spinach and cumin This is a third way to accompany it.
Accompany your socca with fresh spinach shoots and rocket. Then fry an onion and a clove of garlic in a pan with a dash of olive oil, add a little cumin with fresh cream, a little lemon juice and salt and pepper.
Socca and quinoa
Accompany your socca with a quinoa salad. You will need quinoa, tomatoes, a little olive oil and lemon juice. And with that a shallot and half a cucumber and a handful of salt.
Make your socca dough by adding a finely chopped carrot, leek and onion. Add a dash of olive oil, salt and pepper. Pour the mixture into an oiled pie dish and put it in the oven.
